This taste like anything but diet food and has to be my all time favorite meal to eat when Im watching my waist line. Because its so filling and full of flavor. I would even eat this when Im not dieting, its that good! I love finding recipes that my kids will love to eat as well. I think its important to start kids early on eating right. And by the way this salad is huge. For some reason this picture just doesn't do it justice. Here is the recipe!
Skinny Cola Fajita Salad
Serves 4, Cook time 20 minutes, Calories per serving 280
1 bag of frozen pre cooked seasoned Fajita steak
1 red peper
1 green pepper
1 yellow onion
1 bag of salad
8 TBS of fat free sour cream
1 cup of salsa
1 cup of caffeine free, diet coke/or pepsi
1. In large sauce pan comine pepper, onion, steak, and diet coke. Cook on high, (uncovered) stirring occasionally until coke is evaporated, about 10-20 minutes.
2. Divide Fajita mixture in fourths. Add one portion to bed of lettuce. Top with 1/4 cup of salsa and 2 TBS of fat free sour cream
