Sun-dried Tomato Shrimp Taco's -Recipe

This is my favorite meal to eat when I'm counting calories! It doesn't taste like a low calorie recipe and I would make and eat these even if I wasn't watching my waistline. They are that good!

Need:

2/3 Cup Chunky Salsa

1/3 Cup sour cream

1/3 Cup oil-packed sun-dried tomatoes

2 cloves of garlic chopped

16 ounces cooked shrimp (70-90 a pound)

1 teaspoon Taco seasoning, enchailda seasoning, or chili powder

2 Tablespoons lime juice,

8 6-inch corn tortillas

2 Cups coleslaw mix

1 teaspoon of salt

1.In a small bowl,combine salsa and sour cream;set aside.
2. In a medium nonstick skillet, heat the 1/3 cup of sun-dried tomatoes(oil included) Add shrimp, seasoning and chopped garlic cloves. Cook and stir for 4 to 6 minutes or until heated through. Remove from heat and stir in lime juice.

3. Place torillas on a microwave-safe plate, Cover and microwave on hight setting for 55 secs. (they will be hot and sometimes they fall apart if they are to hot, so be careful)
4. To serve, fill each of the tortillas with 1/4 cup of colslaw and 1/4 cup of shrimp mixture, and 2 tablespoons of salsa mixture.
Serves: make 10 tacos Calories: 175 a taco
